Recipe of the week: Blackened Chicken & Waffles w/ Strawberry mint syrup

Cook Time: 30 Minutes

Ingredients

  • Waffle Mix

  • 2-3 Chicken Breast*

  • 1 Pack of Strawberries*

    Finessable: Your favorite fruit

  • 1 mint leaf

  • Favorite Blackening Seasoning

  • syrup

  • Butter

Directions

Blackened Chicken and Waffles with/ Strawberry-Mint Syrup

1. Go ahead and heat your waffle maker, and begin to follow the instructions for your favorite waffle mix.

2. Beat your chicken thin with your fist or hammer ( a cooking hammer, well  I guess if you really want you could use a regular hammer). After that season your chicken liberally with your favorite blackening seasoning.

3. Heat up a medium skillet to medium heat, place chicken, and let the chicken sear until cooked. 3-5 minutes ( start timer). While your chicken is cooking, oil your waffle maker and begin to make your waffle!

4. Make sure you are watching both your chicken and waffle, and if you can manage take your syrup put into a sauce pan/pot with the strawberries and mint leaf. Let this simmer on medium low for 3 minutes (start timer)

5. Once your chicken and waffles are done put on a plate, and wait for the syrup to finish.

6. Now once finished drizzle the syrup (as much as you want on the chicken and waffles)

7. Then EAT!


TRIple S (Simple Salmon Sandwich)

Cook Time: 30 Minutes

Ingredients

  • 2-4 Salmon Fillets

  • 1 Red Leaf Lettuce Head

Finessable: Spring Mix oR spinach

  • 1 Red Onion

Finessable: Any OnioN or Bell Pepper

  • Fennel, sliced thin

Finessable: Cucumber or Tomato

  • Focaccia Bread

Finessable: Dinner Roll or Sliced Bread

  • 3 Tablespoons Canola Oil

Finessable: Olive Oil & Butter (Use a 50/50 mix)

  • Salt

  • Pepper

Spread Ingredients

  • 1 cup mayo

Finessable: Sour Cream or Plain Greek Yogurt

  • 2-3 tablespoons Fresh Dill, chopped

Finessable: Fennel Leave or Thyme

Directions

1. Go ahead and preheat a skillet big enough to contain your Salmon fillet, while that is heating up sprinkle the salt and pepper on both sides of the Salmon fillet.

2. Once skillet is preheated add the oil to the skillet and wait until it gets hot. When it is hot add the Salmon fillet flesh side down. You are going to let each side sear for 4 minutes, and then set to the side and rest.

3. Now don’t let your Salmon burn, but while it is cooking you can begin to slice the fennel bulb and then the red onion. By the time you finish this, your Salmon should be done, (Unless you’re an expert chef slicing and dicing at super speeds.)

4. Then Wash, Rinse, & Chop lettuce into strips

5. Take the fresh dill and mince finely......meaning just chop into super tiny pieces. Take the dill and stir into the mayo. Add a little black pepper into the mix as well.

6. Cut your focaccia bread and cut in half horizontally…..you know to actually make the sandwich. If you want you can add a little crunch and toast your bread, but it is not needed.

7. Final step you have to make your Triple S. Put the salmon on the bottom half, then lettuce on top, then the onions & fennel. Take a nice big amount of the dill mayo and slather it across the top half of the sandwich bread. Put it all together. Take a picture if you’d like.

8. EAT!
